Mama T’s Classic Homemade Lasagna (Hearty Family Recipe)

Mama T’s Lasagna starts with a slow-simmered meat sauce built from San Marzano tomatoes, pancetta, and a blend of ground meats, then layered with a creamy cheese filling and tender lasagna noodles.


This is a Sunday supper lasagna — perfect for family gatherings, holidays, or anytime you want a meal that feeds a crowd and fills the house with comfort.



Ingredients:

Meat Sauce

• Olive oil

• 4–6 oz pancetta, diced

• 1 Vidalia onion, finely chopped

• 4 (28 oz) cans whole San Marzano tomatoes

• 2–3 cloves garlic, minced

• Italian seasoning, to taste

• 1 lb ground chuck

• ½ lb ground pork

• ½ lb ground veal

• ½ lb hot Italian sausage

• ½ lb mild Italian sausage

• ¼–½ cup grated Parmesan cheese

• Optional: tomato paste (for thickening)


Cheese Filling Ingredients

• Monterey Jack cheese, shredded

• 24 oz cottage cheese

• ½ cup sour cream

• 8 oz cream cheese, softened

• 2 eggs

• Fresh Italian herbs (parsley, basil, or oregano)


For Assembly

• Lasagna noodles, cooked al dente

• Sliced mozzarella cheese

Prepare:

Make the Meat Sauce

Prepare Noodles & Cheese Filling

10. Cook lasagna noodles in salted water until al dente. Drain and set aside.

11. In a large bowl, mix Monterey Jack, cottage cheese, sour cream, cream cheese, eggs, and fresh herbs until smooth.



How to Layer Lasagna (Mama T’s Way)

1. Preheat oven to 375°F.

2. Spread a thin layer of sauce in the bottom of the baking dish.

3. Add a layer of noodles.

4. Spoon sauce over noodles, then add a layer of cheese filling.

5. Repeat layers until the dish is full, ending with sauce on top.

6. Finish with sliced mozzarella cheese.



Baking Instructions

• Cover with foil (spray foil with non-stick spray to prevent sticking).

• Bake 30 minutes covered.

• Uncover and bake 15–20 minutes, until bubbly and lightly browned.

• Rest 10–15 minutes before slicing.



Notes from the Kitchen:

• The cheese layer always goes on top of the meat sauce, except for the first layer, which is sauce → noodles → sauce.

• Alternate noodle direction with each layer (horizontal, then vertical). Trim noodles as needed — this makes slicing clean, even portions.

Refrigerator Storage (Short-Term)

• Allow lasagna to cool completely before storing.

• Cover the baking dish tightly with foil or transfer slices to an airtight container.
