This Garden to Table Creamy Tomato Sausage Pasta combines sweet garden tomatoes, savory Italian sausage, fresh garlic, and a splash of heavy cream into a rich, comforting meal that’s surprisingly simple to make.

Ingredients:
1 lb mild Italian sausage
2 tablespoons butter
½ large red bell pepper, diced
½ medium shallot, diced
3 cloves garlic, minced
3 medium garden slicing tomatoes, chopped
Several garden cherry tomatoes, left whole
Several garden currant tomatoes, left whole
¾ cup heavy cream
Salt, to taste
Black pepper, to taste
Italian seasoning, to taste
12 ounces pasta (egg noodles, rotini, or your favorite shape)

Prepare:
Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and set aside.
While the pasta cooks, brown the Italian sausage in a large cast iron skillet over medium heat. Remove the sausage and set aside.
Add the butter to the same skillet. Once melted, sauté the diced red pepper until it begins to soften.
Stir in the chopped garden tomatoes, whole cherry tomatoes, whole currant tomatoes, salt, pepper, and Italian seasoning. Cover and simmer for several minutes until the tomatoes soften and begin creating a rustic sauce.
Add the shallot followed by the garlic. Cook for another minute until fragrant.
Pour in the heavy cream and stir until combined.
Return the cooked sausage to the skillet and simmer for 2–3 minutes.
Add the cooked pasta and toss until every bite is coated in the creamy tomato sauce.
Serve immediately with freshly grated Parmesan cheese and red pepper flakes if desired.

Fresh garden tomatoes are the star of this recipe, so don’t worry about using only one variety. Mixing slicing tomatoes with cherry tomatoes and smaller currant varieties adds wonderful texture and natural sweetness.
Leaving the cherry and currant tomatoes whole allows them to burst while cooking, creating little pockets of fresh tomato flavor throughout the dish.
