Sometimes the best recipes start with a Facebook video and a little inspiration. When Cowboy sent me a video for Dirty Squash, I knew I had everything I needed right here at home. Fresh crookneck squash from the garden, a local market beef sausage, and a trusty cast iron skillet came together to create a simple, flavorful meal that quickly earned Cowboy’s stamp of approval.
This Dirty Squash Skillet is packed with garden-fresh vegetables, savory sausage, and Southern-inspired flavor. It’s an easy one-pan meal that’s perfect for busy weeknights and a great way to use up summer squash from the garden.

Cast iron skillet
Cutting board

Ingredients:
1 lb local ground beef sausage
4 crookneck squash, diced
1 small orange bell pepper, diced
1 shallot, diced
1 jalapeño, diced
3 cloves garlic, minced
1 tsp Cajun seasoning
1/2 tsp dried thyme
1/2 tsp black pepper
1 tsp Worcestershire sauce
1/2 cup shredded cheddar cheese (optional)
Green onions for garnish (optional)

Prepare:
Brown sausage in a cast iron skillet over medium-high heat.
Add shallot, jalapeño, and bell pepper. Cook until softened.
Stir in garlic and cook for 30 seconds.
Add squash, Cajun seasoning, thyme, black pepper, and Worcestershire sauce.
Cook uncovered, stirring occasionally, until squash is tender and excess moisture has evaporated.
Sprinkle cheddar cheese over the top and cover until melted.
Garnish with green onions if desired and serve.

Notes from the Kitchen:
Fresh garden squash releases a lot of moisture. Cooking uncovered helps concentrate the flavor.
Don’t over-stir the squash. Let it sit between stirs so it develops some color.
For extra flavor, push the squash and sausage mixture to the sides of the cast iron skillet near the end of cooking. Let the center of the skillet get hot, then stir everything back together and allow it to sit briefly. This little bit of caramelization adds tremendous flavor.
Heat levels can vary depending on your sausage and jalapeño. Taste and adjust to your preference.
