It all started with a beer-butt chicken…
And then came the leftovers.
For this recipe, smoky beer-butt chicken joined a creamy mixture of vegetables, garlic and herbs. Then I took a little shortcut: boxed pancake mix became the dumplings.
Something a little different—and honestly, really good.
The pancake-mix dumplings cooked up soft, fluffy and substantial, giving the whole dish more of a cozy chicken pot pie texture than traditional Southern dumplings.

1 cup milk
½ cup half & half
¾ teaspoon dried thyme

⅛ teaspoon dried oregano
¼ teaspoon black pepper
⸻
Prepare:
Make the Chicken Filling
Melt the butter in a large Dutch oven over medium heat.
Add the onion and celery. Cook for 4–5 minutes, until they begin to soften.
Add the garlic and cook for about 30 seconds, just until fragrant.
Sprinkle the flour over the vegetables. Stir constantly for about 1 minute.
Slowly pour in the chicken broth, stirring as you go.
Add the milk, half & half, thyme, oregano and black pepper.
Bring the mixture to a gentle simmer and allow it to thicken slightly.
Add the frozen mixed vegetables and pulled beer-butt chicken.
Simmer gently for about 10 minutes while you prepare the dumpling batter.
Make the Pot Pie Dumplings
Add the pancake mix, thyme, oregano and black pepper to a mixing bowl.
Add ⅔ cup milk and stir just until combined.
The batter should be thick and scoopable, not pourable like ordinary pancake batter.
If it’s too thin, add pancake mix a tablespoon at a time. If it’s too stiff, add milk a tablespoon at a time.
Drop & Cook
Keep the chicken mixture at a gentle simmer.
Drop the batter by heaping tablespoons over the surface of the chicken mixture.
Don’t stir the dumplings.
Cover the pot tightly.
Reduce the heat to low and cook for 15 minutes without lifting the lid.
Check one dumpling in the center. It should be fluffy and cooked through.
If necessary, cover and cook for another 3–5 minutes.
Serve hot with plenty of creamy chicken and vegetables underneath and around those fluffy dumplings.

Notes from the Kitchen:
These aren’t traditional rolled or “slick” Southern dumplings—and that’s intentional.
The boxed pancake mix creates a soft, fluffy, substantial topping that reminded me much more of chicken pot pie than traditional chicken and dumplings.
Don’t skip the thyme. It works beautifully with the smoky seasoning from the chicken without fighting it.
Don’t over-season the filling before tasting it. The leftover beer-butt chicken brings plenty of flavor of its own.
